TAIPEI (Taiwan News) — Capella Taipei has officially unveiled The Glasshouse, a three-story standalone venue on Dunhua North Road that aims to add a new dimension to the city’s nightlife.

Located just steps from the main hotel, the venue houses three concepts — Tilt, Cooper, and Playback — each offering a different approach to cocktails and food.

On the first floor, Tilt serves as a "liquid map" of Taiwan, highlighting the island's seasonal bounty.

The cocktail menu features local ingredients: Hualien’s roselle is reimagined as a floral tonic, while Yunlin’s Ponkan adds a bright citrus note. Pingtung cacao also appears in the menu, offering a deeper, tropical flavor.

Tilt also presents a polished take on Taiwanese bistro culture. The menu elevates familiar comfort foods, including Taiwanese salt pepper chicken, alongside house-made kombuchas. Other dishes include a Wagyu beef sandwich and mapo tofu sliced noodles.

On the second floor, Cooper caters to guests interested in aged spirits. Named after barrel-making artisans, the European-style salon focuses on the evolution of spirits over time.

Classic cocktails are reworked with rare bottles, including 15-year-old Pappy Van Winkle and 60-year-old gin. Guests can choose staples such as an Old Fashioned or Martini.

The venue’s basement, Playback, is a speakeasy inspired by Japanese vinyl culture and a craftsman spirit. The menu translates musical moods into cocktails, including the signature "Lemon," inspired by Kenshi Yonezu’s ballad and made with Coffey Gin and lemon fruit liquor.

Meanwhile, the “Koi Suru Fortune Cookie” mixes shochu and strawberry puree and includes a real fortune cookie.

The Glasshouse positions itself as a place where Taiwan ingredients — from cacao to sliced noodles — meet international bar concepts, offering multiple experiences under one roof.
