World’s 13th-best pizza chef begins Taipei residency

TAIPEI (Taiwan News) — Giuseppe Errichiello, the master pizza chef known as Mr. Peppe, has begun a limited-time residency at the Sheraton Grand Taipei Hotel’s Pizza Pub Italian Restaurant, which will run through Dec. 31.

Mr. Peppe is a devoted guardian of his family's pizza-making heritage, originally hailing from Naples, Italy. He is recognized globally after his Tokyo establishment earned second place in the 2025 “50 Top Pizza Asia-Pacific” awards and 13th place on the prestigious “50 Top Pizza World” ranking.

He moved to Japan in 2006, where he began fusing the authentic Neapolitan craft with the Japanese pursuit of precision and detail. This unique approach gave rise to the distinctive “Peppe Style,” a balanced culinary creation that honors tradition while embracing innovation.

By 2011, he launched his first pizzeria in Tokyo, "Pizzeria da Peppe Napoli STA 'CA," quickly becoming a culinary sensation. Today, he operates three Tokyo restaurants. His flagship location in Azabudai, Risto Pizza by NAPOLI STA 'CA," is credited with pioneering the globally trending and highly exclusive pizza omakase experience.

The highlight of the Taipei residency is the debut of the highly anticipated pizza omakase tasting menu, available for five limited meal periods. The chef will prepare a nine-course Italian meal using top-tier seasonal ingredients such as Japanese A5 Wagyu, sashimi-grade scallops, and prized Italian black truffles.

The restaurant is also offering 14 of Mr. Peppe's new a la carte and sharing dishes through Dec. 31. These offerings beautifully blend traditional Neapolitan core techniques with a modern, inventive approach. A la carte selections start at NT$280 (US$9), with group sharing menus also available.

Signature offerings showcase luxurious ingredients and inventive Italian techniques, starting with the saffron arancini with truffle, a classic Sicilian appetizer featuring fried arborio rice balls topped with black truffle and Parmesan cheese.

For pizza, the truffle cheese rhapsody uses a base of rich mushroom puree instead of traditional tomato sauce, baked with mozzarella, and finished with Taleggio, Ricotta, and black truffle shavings. Another signature pizza, “Wandering in the Town of Bergamo,” uses a bold combination of gorgonzola, mozzarella, and grana padano paired with spicy salami for a savory, flavorful profile.

Main courses include the slow-braised Wagyu rump, a premium A5 Wagyu dish slow-cooked in white wine and spices and finished with black truffle and parmesan.

Finally, the pasta selection features prawn paccheri, a tube-shaped pasta served with prawns, zucchini puree, and topped with seared mullet roe. For a light finish, the dessert menu features the panna cotta with tayberry and green grapes, a light Italian classic enhanced by the subtle tartness of a raspberry-blackberry hybrid.
