Taiwan chef unveils theatrical dessert experience in Taipei

TAIPEI (Taiwan News) — In a hidden Taipei alley, Chef Season Hung (洪守誠) is offering guests a theatrical dining experience where sweet and savory creations take center stage.
Season Artisan Patissier, a Taiwanese brand known for blending classical French pastry techniques with modern artistry, has opened a new concept store described by Hung as a “dessert theater,” where guests embark on a creative and emotional journey told through taste.
Hung said the new venture draws inspiration from La Belle Epoque, the early 20th-century French era of romanticism and artistic extravagance. He translated the spirit of that age into a unique culinary language, presenting what he calls Taipei’s only dessert speakeasy.
The exclusive dining experience features a 10-course tasting menu combining sweet and savory dishes, reflecting Hung’s 20-year career, his memories of France, and his use of Taiwanese ingredients.
The journey begins with “piggy biscuits,” cookies filled with marinated pork, garlic, star anise, and caramelized onion puree — a playful savory starter. Another dish, a fruit spring roll, takes inspiration from Van Gogh’s paintings and Hung’s childhood memories, filled with vegetables and fruit jellies as a commentary on sustainability.
A nostalgic souffle recalls the flavors of candied fruit and his parents’ first date, while the finale is a dairy-free chocolate water mousse with hazelnut and marjoram that retells a century-old love story.
Hung said his aim is to merge the elegance of French patisserie with personal memories in a theatrical style, creating a dining experience that is both intimate and universal.
