TAIPEI (Taiwan News) – Right next to the Taipei Fine Arts Museum, Rolling Dough, a newly opened cafe, welcomes Swiss pastry chef Florian Bourquin.

This collaboration between MMHG Hospitality Group and Alife Holdings marks a fresh chapter for Taipei's culinary and cultural scene, promising a unique take on the beloved croissant.

Bourquin, formerly the pastry chef for the prestigious Pierre Marcolini, is known for his mastery of European baking techniques, creating pastries with distinct layers and crisp textures. His vision for Rolling Dough is to establish it as a premier specialty croissant store, a concept reflected in its name, which symbolizes layers of folded, thoughtfully kneaded dough and the precious small moments of daily life.

What truly sets Rolling Dough apart is Bourquin's innovative approach to croissant design. Beyond the traditional crescent, he molds croissants into cubes, cylinders, and spheres.

This unique aesthetic, achieved through special molds imported from Italy, not only creates visually striking pastries but also sparks intrigue among customers. Bourquin explained that this artistic presentation perfectly complements the atmosphere of TFAM, making the act of enjoying a croissant an extension of the art experience.

Rolling Dough offers six flavors. The pistachio croissant has quickly become a surprising bestseller, highlighting evolving local palates. Other popular choices include the savory Margherita, ham and cheese, and the classic chocolate.

Adding to its unique appeal, Rolling Dough's seating area boasts a rare low-altitude flight path view, offering patrons the unique opportunity to see planes flying over TFAM. Guests can relax with their coffee and pastry, looking up to watch aircraft soar across the Taipei skyline.

The cafe emphasizes freshly baked croissants and specialty coffee, available for both dine-in and takeout. Bourquin encourages visitors to take their croissants for a stroll through the nearby Taipei Expo Park Yuanshan Area, extending the cultural afterglow of their museum visit.
